Feature Friday Recipe: Healthy Holiday Edition

In an effort to help clients stay healthy and avoid from using their long term care insurance policy as long as possible, we are committed to featuring health tips and tricks. In honor of the quickly approaching holidays we have decided to feature four of our favorite and healthy holiday recipes! Our holiday wish for you, is that you spend this holiday season surrounded by great friends, family, as well as healthy-ish delicious foods!

Healthier Green Bean Casserole

Ingredients:

  • 3 to 4 medium shallots, in their skins
  • Kosher salt, plus 1 1/2 teaspoons
  • 1 pound fresh green beans, stemmed, and halved crosswise
  • 1 tablespoon extra-virgin olive oil
  • 8 ounces cremini mushrooms, sliced (about 4 cups)
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups mushroom, vegetable, or chicken broth
  • 3 teaspoons fresh thyme leaves
  • Freshly ground black pepper
  • Vegetable cooking spray
  • 1 cup fresh bread crumbs

Holiday Beet Salad

Ingredients:

  • 1 pound beets, roots and stems trimmed
  • 1/4 cup plus 3 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 4 shallots, peeled and halved
  • 2 oranges
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon sugar
  • 1/2 teaspoon Dijon mustard
  • 12 ounces mixed greens
  • 2 to 3 tablespoons salted sunflower seeds

Roasted Salmon with Citrus Salsa Verde

Ingredients:

  • 1 shallot, very thinly sliced into rings
  • Finely grated zest from 1 orange, divided
  • Finely grated zest from 1 lemon, divided
  • 1 Tbsp. plus 1/2 cup extra-virgin olive oil
  • 1 lb. salmon fillet, preferably wild
  • Kosher salt
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped parsley
  • 1 small garlic clove, finely grated
  • 1/2 tsp. smoked paprika
  • Fresh juice from 1 orange
  • Fresh juice from 1 lemon

White Chocolate Holiday Bark

Ingredients:

  • 1 cup sliced almonds
  • 1/4 cup unsweetened coconut
  • 1 cup oven-toasted rice cereal
  • 1 cup dried cranberries
  • 1 1/2 pounds good-quality white chocolate, chopped
  • 2 teaspoons vegetable oil
