Ahi Tuna Poke Bowls

Ingredients:

  • 1 pound sushi grade ahi tunacut into ¾-inch cubes
  • ¼ cup soy sauce
  • 1 teaspoon rice vinegar
  • 1 ½ teaspoons sesame oil
  • ¾ teaspoon red pepper flakescrushed
  • 1/3 cup green onionsthinly sliced
  • ½ teaspoon sesame seedsplus more for garnish
  • 2 cups brown riceor white rice, cooked
  • 2 cups salad greens

Pecan Crusted Salmon 

Ingredients:

  • 1/2 cup of uncooked quinoa
  • 1 cup of veggie broth
  • 1/8 cup of finely chopped parsley
  • 1/8 cup of panko bread crumbs
  • 1/8 cup of chopped pecans
  • pinch of salt and pepper
  • 2 pieces of salmon
  • 1 tablespoon of butter
  • 1 tbs honey
  • 1 tbs soy sauce
  • 1 tbs lemon juice
  • 1 teaspoon grated ginger
  • 1/2 teaspoon of cornstarch

Roasted Eggplant and Shrimp

Ingredients:

  • 1 large eggplant, cut into 1-inch chunks
  • 1/3 cup + 1 tablespoon olive oil
  • 2 tablespoons harissa
  • 1 1/2 teaspoons ground cumin
  • 2 teaspoons salt
  • 12 ounces shrimp, shelled and deveined
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon lemon zest
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup roughly chopped fresh mint

Poached Sea Bass

Ingredients:

  • 1 tablespoon butter
  • 1/2 yellow onion, thinly sliced
  • 2 sea bass fillets
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 cup white wine
  • 2 Roma tomatoes, sliced
  • 10 Castelvetrano olives, halved
  • 1/4 cup parsley, coarsely chopped
  • 1/4 cup basil, coarsely chopped

Spinach and Feta Stuffed Salmon

Ingredients:

  • 2 tablespoons olive oil, divided
  • 4 (6-ounces) salmon fillets
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups baby spinach
  • 1/3 cup crumbled feta
  • 1 teaspoon kosher salt
  • optional topping – microgreens
