This Friday’s Featured recipe includes a full day of healthy eating! Coming up with a full day of ideas for healthy breakfast, lunch, dinner, and snack options can be difficult. Compiled below is a full day of yummy and clean eating for you as we’re happy to help you achieve your goals (Please note these recipes do not belong to LTC TREE).

 

 

Breakfast –Italian Egg Toast

INGREDIENTS

  • 1 Tablespoon olive oil
  • 2 slices whole wheat bakery bread
  • 2 large eggs
  • ¼ teaspoon kosher salt
  • dash of black pepper
  • 1 teaspoon Italian seasoning
  • optional: 4 leaves fresh garden basil or fresh garden herb

Snack- Green Smoothie

INGREDIENTS

  •  3 cups packed spinach
  •  1 medium very ripe banana — peeled, cut into chunks, and frozen (slightly less than 1 cup)
  •  1 cup whole frozen strawberries — about 10 large/medium berries
  •  ¼ cup frozen pineapple chunks
  •  1 cup unsweetened almond milk or milk of choice
  •  1 tablespoon chia seeds

Snack- Peanut Butter Rice Cakes

INGREDIENTS

  • 4 organic rice cakes
  • 1/4 cup creamy peanut butter
  • 2 bananas
  • 1 tbsp honey, optional

Lunch- Honey Sriracha Chicken

INGREDIENTS

  • 2 pounds boneless, skinless chicken breasts
  • ½ cup honey
  • ¼ cup olive oil
  • 2 tablespoons Sriracha
  • Kosher salt
  • Freshly ground black pepper
  • 2 (6 ounce) boxes Uncle Ben’s® Long Grain and Wild Rice Original Recipe
  • 2 avocados, sliced
  • 1 bunch scallions, chopped
  • Crumbled queso fresco

Dinner- Steak and Potatoes

  • 3 tablespoons olive oil
  • 1 pound medium Yukon Gold or red potatoes, cut into 3/4-inch wedges
  • 1/2 teaspoon kosher salt
  •  1 1/2 pounds flank steak, cut into 2 pieces
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley leaves
  • 1 teaspoon freshly squeezed lemon juice, plus more as needed
