This Friday’s Featured recipe includes five delicious “healthy-ish” air fryer recipes for you to try! We value the importance of healthy eating but we also recognize the need to indulge every once in a while. Some foods are better enjoyed fried and we even have healthy alternatives like air fryers for frying now! Give these five recipes a go. (Please note none of these recipes belong to LTC TREE)

 

BAKED EGGPLANT STICKS

INGREDIENTS:

  • 10 oz eggplantfrom 1 small or 1/2 large
  • 1 tsp olive oil
  • 1/2 tsp kosher salt and fresh cracked pepper
  • 1/2 cup Italian seasoned breadcrumbs(substitute with gluten bread crumbs if GF)
  • 2 tbsp Parmesan cheese
  • 1 large egg white
  • oil spray
  • 1 cup  quick marinara sauce for dippingoptional, extra

AIR FRYER HARD “BOILED” EGGS

INGREDIENTS:

  • 4 large eggs
  • Saltblack pepper, everything bagel seasoning, optional

 FISH STICKS WITH LEMON CAPER SAUCE

INGREDIENTS:

Lemon Caper Sauce:

  • 1/4 cup fat free plain Greek yogurt
  • 3 tablespoons light mayonnaise
  • 1 tablespoon drained capers
  • 1 tablespoon fresh minced chives
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

For the Fish Sticks:

  • cooking sprayI use a mister
  • 1 pound Alaskan skinless cod filletabout 1-inch thick (thawed if frozen)
  • 3 large egg whites
  • 1 tablespoon Dijon mustard
  • 1/2 lemonsqueezed
  • 1/8 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

For the crumbs:

  • 1 cup plain or gluten-free Panko crumbs
  • 1 1/2 teaspoons Old Bay seasoning
  • 2 teaspoons dried parsley flakes
  • 1/2 teaspoon paprika

AVOCADO FRIES

INGREDIENTS:

  • 8 ounces 2 small avocados, peeled, pitted and cut into 16 wedges
  •  large egglightly beaten
  • 3/4 cup panko breadcrumbsI used gluten-free
  • 1 1/4 teaspoons lime chili seasoning saltsuch as Tajin Classic

For the lime dipping sauce

  • 1/4 cup 0% Greek Yogurt
  • 3 tablespoons light mayonnaise
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon lime chili seasoning saltsuch as Tajin Classic
  • 1/8 teaspoon kosher salt

BASIL-PARMESAN CRUSTED SALMON

INGREDIENTS:

  • olive oil spray
  • 4 salmon fillets, skin removedabout 5 ounce each
  • 1/2 lemon
  • 1/4 teaspoon Kosher salt
  • freshly ground black pepper
  • 3 tablespoons mayonnaiseI like Sir Kensington
  • 6 fresh basil leavesminced, plus more for garnish
  • 3 tablespoons grated Parmesan or Romano cheese
