Grilled Pork Tenderloin with Grainy Mustard Vinaigrette

Ingredients:

  • 12 oz. green beans
  • 2 tbsp. olive oil, divided
    1 1/4 lb. pork tenderloin
    3 tbsp. no-salt added grainy mustard
    2 tbsp. red wine vinegar
    small shallot, finely chopped
    1 tsp. mayonnaise
    6 c. baby kale
    1 pt. grape tomatoes, cut into halve

Salmon Burgers with Cabbage-Apple Slaw

Ingredients:

green onions
1 1/4 lb. salmon fillets, cut into chunks
2 tsp. curry powder
1/2 medium head red cabbage
Cooking spray
1/2 green apple, cut into matchsticks
2 tbsp. cider vinegar
brioche buns
mayonnaise

Supergreen Mushroom & Orzo Soup

Ingredients:

  • 2 tbsp. extra-virgin olive oil
  • 1/4 tsp. Kosher salt
    1 1/4 c. celery
    1/2 c. shallots
    1/4 c. garlic
    8 c. vegetable or chicken broth
    3 c. broccoli
    3 c. sliced spinach
    1 c. sliced mushrooms
    1 c. orzo
    basil pesto

Cabbage Burritos

Ingredients:

  • large green cabbage leaves (from 1 head)
  • 1 tbsp. extra-virgin olive oil
  • 1/2 onion, chopped
  • 1 lb. ground beef
  • cloves garlic, minced
  • 1 tbsp. taco seasoning mix
  • Kosher salt
  • Freshly ground black pepper
  • (15-oz.) can black beans
  • 1 1/2 c. chopped cherry tomatoes
  • 1 c. corn, canned and drained or frozen
  • 1 c. shredded Monterey Jack
  • 1/2 c. shredded cheddar

Chicken Taco Avocados

Ingredients:

  • 1 c. black beans, cooked
    1 c. canned corn
    4-oz. can green chiles, divided
    1 c. shredded rotisserie chicken
    1 c. shredded Cheddar, plus more for topping
    package taco seasoning
    2 tbsp. fresh cilantro, plus more for topping
    ripe avocados
    1 c. ranch dressing
    1/4 c. lime juice
    1 tbsp. fresh cilantro
    1 tsp. kosher salt
    1 tsp. fresh ground black pepper
