If you have an instapot at home or are thinking of purchasing one, check these recipes out! Now you have plenty of one pot meals to test out with the whole family and what’s better than healthy and easy. (Please note these recipes do not belong to LTC TREE).

Vegetarian Lentil Soup

Ingredients:

  • 1 cup diced onion
  • 1 tsp avocado oil
  • 1 bell pepper diced
  • 1 jalapeno pepper diced
  • 2.5 cups vegetable broth
  • 15 oz canned tomato sauce or crushed tomatoes
  • 1/2 cup mild or medium salsa verde
  • 1 TBSP tomato paste
  • 15 oz can black beans (drained + rinsed)
  • 15 oz can pinto beans (drained + rinsed)
  • 1 cup corn
  • 3/4 cup dried red lentils
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4-1/2 cup heavy cream* (optional – see notes)
  • salt and pepper to taste

Chicken Tortilla Soup

Ingredients:

  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 4 cloves garlic minced
  • 4 ounce can mild fire roasted diced green chiles
  • 14.5 ounce can fire roasted diced tomatoes
  • 15 ounces red enchilada sauce
  • 1-2 teaspoons chili powder
  • 1 teaspoon cumin
  • 15 ounce can black beans rinsed and drained
  • 4 cups low sodium chicken broth
  • 1 pound boneless skinless chicken breast
  • 15 ounce can corn drained (or 1 cup frozen corn), optional
  • salt and pepper to taste
  • For serving: lime wedges, crumbled tortilla chips, sour cream or plain Greek yogurt, shredded cheese, and/or avocado

Chicken and Rice

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup chopped onion 1 small onion
  • 4 medium carrots cut lengthwise and then chopped into ½-inch pieces
  • 3 cloves garlic minced
  • 1 ½ cups long grain brown rice uncooked, rinsed well and drained
  • 2 teaspoons dried Italian seasoning
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups low sodium chicken broth
  • 1 pound boneless skinless chicken breasts
  • 1 cup frozen peas
  • fresh parsley and grated Parmesan cheese for serving 

Veggie Ragu

Ingredients:

  • 1 lbs (454 gr) extra lean ground beef
  • 4 links (around 454 gr) Italian Sausage, casings removed
  • 2 large carrots, roughly chopped
  • 1 large onion, roughly chopped
  • 4 cloves garlic
  • 1 small-medium zucchini, trimmed and roughly chopped
  • 1 large bell pepper, roughly chopped
  • 2 cups spinach leaves
  • 2 28oz can (2 x 796 mL) crushed fire roasted tomatoes
  • 1/4 cup red wine
  • 1 cup beef or vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8-1/4 tsp crushed red pepper flakes
  • 1 tsp kosher salt
  • 1 tsp fresh ground black pepper

Thai Peanut Noodles

Ingredients:

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 c. Thai peanut sauce
  • 3/4 c. chicken broth
  • 5 oz. stir-fry rice noodles
  • 1 c. sugar snap or snow peas
  • optional garnishes – chopped peanuts red pepper flakes, green onions & cilantro
