Ground Turkey Couscous

Ingredients

  • 1/2 cup whole wheat couscous
  • 1 pound lean ground turkey
  • Salt and freshly ground black pepper
  • 1 teaspoon olive oil
  • 2 cups butternut squash, peeled, seeded and diced
  • 1 cup broccoli florets
  • One 15-ounce can no-sodium-added black beans
  • One 10-ounce can enchilada sauce
  • 1/2 cup salsa
  • Suggested toppings: chopped fresh cilantro, diced avocado, shredded cheese, lime juice

Shrimp and Lentils

Ingredients

  • 3 tablespoons unsalted butter
  • 1 large shallot, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon plus 1 teaspoon finely chopped peeled fresh ginger
  • 2 plum tomatoes, cored and chopped
  • 1 1/2 teaspoons garam masala
  • Kosher salt and freshly ground pepper
  • 1 cup dried red lentils
  • 1 1/4 pounds peeled and deveined shrimp (about 24)
  • 3 cups baby spinach
  • 2 tablespoons canned unsweetened coconut cream
  • 1/2 cup lightly packed fresh cilantro, chopped

Salmon with Grapefruit Sauce

Ingredients

  • 4 skinless salmon fillets, 5 to 6 ounces each
  • 1/4 teaspoon salt, plus more for seasoning
  • 2 ruby red grapefruits
  • 2 teaspoons olive oil
  • 1 tablespoon minced shallot
  • 1 teaspoon freshly grated ginger
  • 2 1/2 teaspoons honey
  • Pinch cayenne pepper
  • 2 teaspoons lemon juice
  • 2 tablespoons thinly sliced basil leaves

Garlic-Ginger Chicken

Ingredients

  • 2 pounds skin-on, boneless chicken thighs
  • 1 cup thinly sliced red onion
  • 2 tablespoons minced garlic
  • 2 tablespoons minced peeled ginger
  • 1/4 cup soy sauce
  • 1/4 cup fresh tangerine or orange juice
  • Freshly ground pepper
  • Vegetable oil, for the grill
