Creamy Tarragon Salad

INGREDIENTS:
  • 1 lb. small, thin carrots, trimmed and halved lengthwise, if large
  • 1 tbsp. olive oil
  • Kosher salt and freshly ground pepper
  • 1/4 c. créme fraîche or sour cream
  • 1 tbsp. chopped fresh tarragon, plus more for garnish
  • 2 tbsp. whole milk
  • 1 tbsp. fresh lemon juice
  • 1 tbsp. mayonnaise
  • 1 tsp. Dijon mustard
  • small heads gem lettuce

Detox Roll-ups

INGREDIENTS:

  • carrots, cut into matchsticks
  • cucumbers, cut into matchsticks
  • red cabbage
  • curry hummus
  • cooked rice or quinoa (optional)
  • peanuts and cilantro
  • collard greens (leaf)
  • 3/4 cup peanut butter
  • 1/4 cup soy sauce (tamari or coconut aminos if gluten free)
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 clove garlic

Butternut Squash with Cider Vinaigrette

INGREDIENTS:
  • small butternut squash (about 1 1/2 pounds each), peeled, seeded, and cut into 1/2-inch-thick slices
  • medium red onion, cut into wedges
  • 3 tbsp. olive oil,
  • kosher salt
  • freshly ground black pepper
  • 1 c. apple cider
  • 1 1/2 tbsp. whole-grain mustard
  • 1 tbsp. red wine vinegar
  • 2 tbsp. chopped fresh flat-leaf parsley

Rosemary Chicken

INGREDIENTS:
  • 2 tbsp. chopped fresh flat-leaf parsley
  • 1 1/2 tbsp. chopped fresh rosemary
  • large garlic clove, chopped
  • 2 tsp. Dijon mustard
  • 3 tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • lemon, cut into thin slices, divided
  • small bone-in, skin-on chicken breasts (about 2 1/2 lbs. total)
  • bunches Broccolini (about 1 lb.)
  • red onion, cut into 1/2″ wedges
  • 1/2 tsp. crushed red pepper, plus more for serving
