This Friday’s Featured recipe includes four delicious and gluten free recipe for those of you with gluten sensitivities allergies! (Please note none of these recipes belong to LTC TREE)

Seared Flank Steak(Full Recipe Here)

Ingredients

  • 2 cups water
  • 2 cups finely chopped carrot
  • 2 tablespoons unsalted butter
  • 1 tablespoon light sour cream
  • 3/4 teaspoon salt, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 3/4 teaspoon black pepper, divided
  • 1 pound flank steak
  • 1 tablespoon olive oil, divided
  • 1 (12-oz.) pkg. frozen steam-in-bag sugar snap peas
  • 1 tablespoon unseasoned rice vinegar

 

Arugula & Egg Salad (Full Recipe Here)

Ingredients

  • 4 large eggs in shells
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 tablespoon extra-virgin olive oil
  • 12 ounces medium asparagus, trimmed
  • 1/4 cup plain whole-milk Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon water
  • 1 (5-oz.) pkg. baby arugula

Shrimp Paella (Full Recipe Here)

Ingredients:

  • 2 (8.8-oz.) pkg. precooked brown rice (such as Uncle Ben’s)
  • 1 1/2 tablespoons canola oil
  • 1/2 teaspoon ground turmeric
  • 1 cup sliced red bell pepper
  • 1 cup frozen green peas
  • 1/3 cup water
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds medium shrimp, peeled and deveined
  • Cilantro leaves (optional)

Ingredients:

  • Cooking spray
  • 1 (12-oz.) flank steak
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 2 teaspoons olive oil
  • 3/4 cup chopped white onion
  • 1/2 cup unsalted chicken stock (such as Swanson)
  • 1 (15-oz.) can unsalted pinto beans, rinsed and drained
  • 3 cups chopped romaine lettuce
  • 1 1/2 cups chopped tomato
  • 1 ounce tortilla chips
  • 1 ripe avocado, thinly sliced
  • 1 1/2 ounces queso fresco, crumbled (about 1/3 cup)
  • 4 lime wedges
