Start Your Day off Right

Chances are you’ve heard it before “breakfast is the most important meal of the day”. Regardless of whether or not this or “all meals were created equally” may be true, breakfast can be the most challenging meal of the day for many individuals as they rush out the door every morning. The reason breakfast can be a challenge is usually due to the typical on the go lifestyle many of us lead, which often involve us spending the entire morning in our cars. Due to this , it is easier for many to either skip breakfast or simply pass by a drive thru window for a less than optimal snack option. In an effort to help you start your day off right, we have compiled below some of our favorite  and easy healthy breakfast recipes found online: (Please note none of these recipes belong to LTC TREE)

Easy Tomato Toast (Full Recipe)

Ingredients:

  • 1 cup soaked raw macadamia nuts, drained and rinsed
  • 1 1/2 tablespoons nutritional yeast
  • 2 teaspoons apple cider vinegar
  • 1 1/2 teaspoon fresh lemon juice
  • 2 teaspoons white mellow miso paste
  • 2 small cloves garlic
  • 8-10 tablespoons filtered water
  • 1/4 teaspoon fine grain sea salt\
  • 6-8 slices whole grain gluten-free bread (or bread of choice), toasted
  • 1/2 pound tomatoes (see notes), sliced with 1/4″ thickness
  • 1/2 cup macadamia ricotta
  • 1/4 cup julienned shiso
  • a few pinches black lava salt (or large grain sea salt)

Easy Berry Smoothie (Full Recipe) 

Ingredients:

  • 3/4 cup fresh blueberries
  • 3/4 cup fresh blackberries
  • 5.3 ounce package plain Greek yogurt
  • 1 cup vanilla soy milk
  • 1 whole banana

On the Go Parfait (Full Recipe)

Ingredients: 

  • 2 cups plain Greek yogurt
  • 1 ½ cups sliced strawberries
  • 1 pint fresh blueberries

Overnight Oats (Full Recipe)

Ingredients:

1/3 cup oats (gluten free or regular)
½ cup almond milk (I used Silk Original Light)
1 teaspoon chia seeds
½ tablespoon maple syrup
1 teaspoon vanilla extract
2 tablespoons slivered almonds
½ medium banana, sliced
1/3 cup blueberries
