Eggplant Parmesan

Ingredients:

  • 1/2 c. all-purpose flour
  • large egg plus 1 egg white
  • 1 c. panko
  • 1/2 c. freshly grated Parmesan cheese
  • 1/2 tsp. garlic powder
  • Kosher salt and pepper
  • 1 tbsp. olive oil
  • small eggplant (about 12 oz.)
  • 16- to 18-oz. package cheese ravioli
  • 1 c. jarred marinara sauce, warmed
  • Shredded fresh mozzarella, for serving

Easy Chicken and “Rice”

Ingredients:

  • 4 c. riced cauliflower
  • 1/4 c. water
  • skinless, boneless chicken-breast cutlets
  • 2 tsp. olive oil
  • 1/4 c. sweetened cream of coconut
  • 2 tbsp. Hot sauce
  • limes, halved
  • (15-oz.) can black beans, rinsed and drained
  • Cilantro, chopped, for garnish

Salmon Cakes

Ingredients:

  • 1 lb. skinless wild salmon, cut into small chunks
  • green onions, sliced
  • 1/2 tsp. grated orange zest
  • Kosher salt
  • 2 tsp. extra-virgin olive oil
  • 1/4 c. fresh basil, chopped
  • 3 tbsp. orange juice
  • 3 tbsp. sherry vinegar
  • extra-virgin olive oil
  • Freshly ground black pepper
  • 5 c. cooked quinoa
  • 5 c. packed mixed greens
  • Orange wedges, for serving
