Sweet Potato Egg Boat 

Ingredients

  • 1 small sweet potato, roasted and still hot from oven
  • 1 teaspoon ghee
  • salt and pepper, to taste
  • 1 egg
  • 2 pieces bacon, cooked and crumbled
  • 1/2 ripe avocado, sliced
  • parsley and/or green onion, chopped, to garnish
  • freshly ground pepper, to garnish

Quinoa Casserole

Ingredients

  • 2 tablespoons olive oil (or reserved bacon fat), plus more to grease pan
  • 2 tablespoons flour
  • 1 cup whole milk
  • 1 cup reduced sodium chicken broth
  • 1/2 teaspoon salt, plus more as needed (optional)
  • 1/2 teaspoon poultry seasoning
  • dash paprika
  • dash cayenne
  • 2 pounds boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 1 cup uncooked quinoa, rinsed
  • 1/2 cup cooked, crumbled bacon
  • 3 cups fresh broccoli florets
  • 1 cup shredded Gruyere cheese

Cashew Milk Alfredo Pasta

Ingredients

  • a pinch of salt
  • a pinch of pepper
  • 1/2 teaspoon minced garlic
  • handful of kale
  • 1/3 cup cashews
  • 3/4 cup Parmesan cheese (add more if you like it cheesier)
  • 1 cup water

Ingredients

— 1 spaghetti squash

— grape tomatoes

— bell pepper

— black beans

— spring onion

— cilantro

— lime

— roasted sweet potato (or leftover cooked chicken/ground beef)

— salsa and guacamole

Greek Salad Pizza

— 8 ounces pizza dough rolled to approximately 12 inches in diameter (or use a 12-inch pizza base)

— 3 tablespoons olive oil

— 2/3 cup shredded mozzarella

— 2/3 cup shredded cheddar cheese

— 1/4 teaspoon dried oregano

— 1/4 teaspoon salt

— 1/4 teaspoon ground black pepper

— 1 cup mild arugula

— 8 olives, pitted and sliced in half

— 4 sundried tomatoes in oil, sliced in half

— 1/8 cucumber (seeds scooped out with a spoon) chopped into quarter moons

— 1/4 small red onion, peeled and thinly sliced

— 1/2 cup crumbled feta cheese

— 2 Tablespoons balsamic vinegar
