Muffin-Tin Pumpkin-and-Pear Stratas

Ingredients:

  • Cooking spray
  • 1 1/2 cups vanilla whole-milk yogurt (not Greek-style)
  • 1 cup canned pumpkin
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 5 large eggs, lightly beaten
  • 1 (1-lb.) French bread loaf, torn into 2-in. pieces
  • 2 cups chopped ripe Bartlett pears (about 2 large)
  • 3/4 cup dried cranberries
  • 2 tablespoons powdered sugar

Devil Eggs

Ingredients:

  • 12 large eggs
  • 2 tablespoons diced pimientos plus more for garnish, drained
  • 2 tablespoons canola mayonnaise
  • 2 teaspoons grainy Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon freshly ground black pepper
  • Dash of hot sauce
  • 4 ounces sharp cheddar cheese, grated (about 1 cup)
  • 3 large pimiento-stuffed olives, each cut crosswise into 4 thin slices

Hibiscus and Blood Orange Punch

Ingredients:

  • 21/2 cups water
  • 6 hibiscus or hibiscus-orange tea bags
  • 1 cup fresh blood orange or navel orange juice
  • 3 Tablespoons honey
  • 1 (750-ml) bottle sparkling wine or sparkling cider
  • 1 blood or navel orange, halved lengthwise and cut into 10 slices

Chocolate-Peanut Butter Apple Wedges

Ingredients:

  • 4 (5-oz.) Granny Smith apples, each cut into 8 wedges
  • 32 (6-in.) wooden skewers
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon powdered peanut butter (optional)
  • 1/2 teaspoon canola oil
  • 2 ounces white chocolate, coarsely chopped
  • 3 ounces bittersweet chocolate, coarsely chopped
  • 2 tablespoons roasted unsalted peanuts, very finely chopped

Cheesy Jalapeño-Sour Cream Corn Muffins

Ingredients:

  • Cooking spray
  • 3/4 cup fine yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons light sour cream
  • 3 tablespoons canola oil
  • 2 large eggs
  • 1 tablespoon chopped pickled jalapeños
  • 2 ounces pre shredded reduced-fat cheddar cheese (about 1/2 cup)
