Quinoa Vegetable Soup

INGREDIENTS:

  • 2 tbsp. extra-virgin olive oil
  • medium onion, chopped
  • carrots, peeled and cut into thin rounds
  • stalks celery, thinly sliced
  • cloves garlic, thinly sliced
  • large zucchini, cut into 1/2″ pieces
  • (14.5-oz.) can diced tomatoes
  • (15.5-oz.) can cannellini beans, rinsed and drained
  • 1 c. quinoa
  • 1/2 tsp. ground cumin
  • 8 c. low-sodium vegetable broth
  • 8 oz. Tuscan kale, ribs removed and leaves thinly sliced
  • 1 tbsp. fresh lemon juice
  • Crushed red pepper flakes, for serving

Roasted Butternut Squash Soup

INGREDIENTS:

  • large butternut squash, peeled and cubed (seeds removed)
  • potatoes, peeled and chopped
  • 3 tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. butter
  • onion, chopped
  • stalk celery, thinly sliced
  • large carrot, chopped
  • 1 tbsp. fresh thyme, plus more for garnish
  • 1 qt. low-sodium chicken broth

Healthy Chicken Noodle Soup

INGREDIENTS:

  • 2 tbsp. extra-virgin olive oil, divided
  • 1 lb. boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. dried oregano
  • large onion, chopped
  • large carrots, peeled and chopped
  • stalks celery, chopped
  • cloves garlic, minced
  • 3 c. water
  • Small bunch thyme
  • bay leaf
  • (12-oz.) package gluten-free noodles
  • bunch Tuscan kale, stemmed and shredded
  • Juice of 1 lemon

Easy Spinach-Lentil Soup

INGREDIENTS:

  • 2 tbsp. extra-virgin olive oil
  • carrots, peeled and diced
  • celery stalks, diced
  • small onion, diced
  • cloves garlic, minced
  • 2 tsp. cumin
  • 1 tsp. coriander
  • 1/4 tsp. crushed red pepper flakes, plus more if desired
  • kosher salt
  • Freshly ground black pepper
  • 14-oz. can diced tomatoes, with juices
  • 10 oz. lentils
  • 2 tsp. fresh thyme
  • 4 c. vegetable broth
  • 4 c. baby spinach

Bacon Cauliflower Chowder

INGREDIENTS:

  • slices bacon, cut into 1″ pieces
  • medium yellow onion, chopped
  • medium carrots, peeled and chopped
  • stalks celery, chopped
  • kosher salt
  • Freshly ground black pepper
  • cloves garlic, minced
  • 2 tbsp. flour
  • sprigs thyme, stripped and chopped
  • head cauliflower, cut into small florets
  • 1 qt. vegetable broth
  • 1 c. whole milk
