Healthy Snacks

Have you ever found yourself on track with your health goals, eating clean, and then suddenly overcome with the urge to snack all day long? You are not alone, in fact many of us enjoy occasional snacks to help us power through the work day! Instead of running to the vending machine, set yourself up for success with these healthy snacks compiled below: (Please note none of these recipes belong to LTC TREE)

 

Avocado Fries (Full recipe here)

Ingredients:

  • 8 ounces 2 small avocados, peeled, pitted and cut into 16 wedges
  •  large egglightly beaten
  • 3/4 cup panko breadcrumbsI used gluten-free
  • 1 1/4 teaspoons lime chili seasoning saltsuch as Tajin Classic
  • For the lime dipping sauce:
  • 1/4 cup 0% Greek Yogurt
  • 3 tablespoons light mayonnaise
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon lime chili seasoning saltsuch as Tajin Classic
  • 1/8 teaspoon kosher salt

Dried Mango Rollups (Full recipe here)

Ingredients:

  • 1 large ripe mangopeeled and chopped
  • 6 ounces fresh raspberries
  • 2 tablespoons sugar

Air Fryer Plantains ( Full Recipe Here)

Ingredients:

  • 1 large green plantainends trimmed and peeled (6 oz after)
  • olive oil sprayI like Bertolli
  • 1 cup water
  • 1 teaspoon kosher salt
  • 3/4 teaspoon garlic powder

Homemade Granola (Full recipe here)

Ingredients:

  • 2 cups old fashioned rolled oats, gluten free
  • 1/2 cup oat flour, gluten free if desired
  • 2 tablespoons flaxseed meal
  • 2 tablespoons white sesame seeds
  • ¾ cup sliced raw almonds
  • ¾ cup raw pecans halves
  • ¾ cup raw cashews
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon sea salt
  • 1/4 cup coconut oil
  • 1/3 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup packed pitted Medjool dates, chopped
  • ½ cup golden raisins

Taco Cups (Full recipe here)

Ingredients:

  • 1 package (8-inch) flour tortillas
  • ½ tablespoon olive oil or avocado oil
  • 2 cloves garlic, minced
  • ½ cup diced white onion
  • 1 slightly underripe plantain, diced
  • 1 jalapeno, seeded and diced
  • Salt and pepper
  • 1 cup BUSH’S® Black Beans in a Mild Chili Sauce, do not drain*
  • 3 ounces manchego cheese, shredded (about ¾ cup)
  • 1-2 ripe avocados
  • Freshly ground salt and pepper, to taste
  • Fresh squeezed lime juice, from ½ a small lime
  • Fresh chopped cilantro
  • Your favorite hot sauce
