Three Low Carb Treats for you

Todays post features three low carb desserts you can indulge in without the guilt. These recipes are great for those doing a Paleo, Keto, or low carb diet. Grab a partner and get to baking for a fun weekend activity! (Please note none of these recipes belong to LTC TREE)

Yummy Beet Brownies (full recipe here)

Ingredients:

  • ¾ c. almond flour
  • ½ c. coconut flour
  • ½ c. cocoa powder
  • 1 ¼ c. stevia powder
  • 1 (15-oz) can beets, with water
  • ½ scoop (about 18 g) of your favorite protein powder (optional)
  • ¼ c. ground flaxseed
  • 2 tsp. instant espresso powder
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1/3 c. butter, melted
  • 2 tsp. vanilla extract
  • 1 egg
  • 1/3 c. mini chocolate chips (optional)

No Bake Cheesecake Squares (full recipe here)

Ingredients:

  • 1 cup pecans
  • 1 tbsp whole wheat or white whole wheat flour
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger, ground
  • 1/8 tsp salt
  • 1 tbsp coconut oil, melted
  • 1 tbsp honey or maple syrup
  • 6 oz cream cheese, low fat or regular
  • 8 oz plain Greek yogurt, non-fat
  • 3 tbsp honey or maple syrup
  • 1/2 cup egg whites
  • 2 tsp pure vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp whole wheat or white whole wheat flour
  • 2 tbsp strawberry jam, organic or homemade

Keto Friendly Muffins (full recipe here)

Ingredients:

  • 2 1/2 cup Blanched almond flour
  • 1/2 cup Erythritol (or any granulated sweetener)
  • 1 1/2 tsp Gluten-free baking powder
  • 1/4 tsp Sea salt (optional, but recommended)
  • 1/3 cup Coconut oil (measured solid, then melted; can also use butter)
  • 1/3 cup Unsweetened almond milk
  • 3 large Eggs
  • 1/2 tsp Vanilla extract
  • 3/4 cup Blueberries
